Black truffle Tuber melanosporum: buying, cooking and discovery

Tuber melanosporum is the scientific name of the black truffle known as Périgord truffle. When buying, check the species and where the batch was harvested: the name “Périgord” does not prove origin in Dordogne. Visits to discover its cultivation at Les Hermessaines can be requested all year round: the programme is adapted to the season and confirmed in a quotation. Harvesting remains a winter activity.

From Périgord, Drôme or Vaucluse?

The common name “Périgord truffle” does not establish where a batch was harvested. For truffles described as French, from Drôme, Vaucluse or the Uchaux massif, ask the seller for the harvest origin. How do you compare truffle offers?

Start by comparing the same product form: fresh, preserved or prepared. Then note weight, price and shipping. A calculation example, not an estate price: 30 g at €36 works out at €1.20/g; 50 g at €55 works out at €1.10/g. The second purchase costs more overall but less per gram. Condition, origin and intended use still need comparison.

Which product should you choose for cooking?

Choose the dish and date first: eggs, potatoes or pasta offer a simple starting point. Ask for a quantity suited to the recipe and instructions for that product. Preserved and fresh truffle are not automatically interchangeable at equal weights. Read sauce or oil ingredients before treating them as equivalent to a whole truffle. What can you discover in a truffle grove?

A truffle grove offers a way to explore the relationship between tree, soil and fungus, followed by the dog’s role in searching. Cavage means extracting the located truffle. At Les Hermessaines, discovery visits can be requested all year round, by quotation. The programme depends on the season and conditions; searching for ripe truffles with the dog takes place in winter. A visit guarantees neither a quantity found nor truffles to take home. Prepare a purchase or an estate visit

For a purchase, specify the product, approximate weight, recipe and date of use. For a truffle grove discovery visit, provide the number of adults and children, possible dates and access needs. The programme and total price including VAT are agreed in a quotation; wait for confirmation of the appointment before travelling.
